Wilted Lettuce

So I know this blog is about a boy named Brooks, but I recreated a salad from my childhood that was so delicious I had to share. This is a great time to try this out because you can find some great lettuce at your local farmer’s market, CSA, or in your own garden. I recommend using black-seeded simpson, red leaf oak, bibb, or boston lettuce (not iceberg or romaine).

Wilted Lettuce:

several large handfuls of lettuce
1/4 cup sugar
1/2 cup apple cider vinegar
3-4 strips bacon, cut in bite-sized pieces
bacon drippings
salt and pepper to taste
2-3 green onions or 1 medium shallot, thinly sliced

After washing lettuce, throughly dry and add to a ceramic or metal bowl. Add the onions. Season lettuce and onions to taste with salt and pepper. Fry bacon and set aside. While drippings are still hot, add sugar and vinegar and boil. Pour over the lettuce and onions and serve. You will have extra liquid at the bottom of the bowl.

This salad doesn’t keep well, so eat it the same day. This was never a problem in our family because it was gone so quickly. You can add other toppings, but I recommend keeping it simple. Enjoy!
